Chocolate Chocolate Chip Cookies


These are similar to my Double Chocolate Cookies. They were a hit at the party and went like hot cakes!


1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 cups semisweet chocolate chips
6 tablespoons butter, softened
1 cup white sugar
1 1/2 teaspoons vanilla extract
2 eggs
1/2 cup confectioners' sugar
  1. Combine flour, baking powder and salt. Set aside.
  2. Melt 1 cup of chocolate chips over low heat. Cream butter and sugar. Add melted chocolate chips and vanilla; beat in eggs; add flour mixture and remaining chocolate chips.
  3. Wrap in plastic and freeze until firm (about 20 minutes).
  4. Make small balls (1 inch); roll in confectioners' sugar. Place on ungreased cookie sheet and bake for 10-12 minutes at 350 degrees F (175 degrees C). Cool on wire rack.





Peanut Butter White Chocolate Chip Cookies

Yum.  These are to die for Peanut Butter Cookies.  Even good without the White Chocolate chips.


1 cup unsalted butter
1 cup peanut butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup white chocolate chips

  1. Cream together butter, peanut butter and sugars. Beat in eggs.
  2. In a separate bowl, sift together flour, baking powder, baking soda, and salt. Stir into batter. Put batter in refrigerator for 1 hour.
  3. Roll into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown. Do not over-bake.

Waffles

Perfect for any time of the day.

I have them plain with Maple Syrup or add 1/2 to 1 cup of Blueberries, Chocolate or White chocolate chips, or anything else you fancy.  Yum!


2 eggs

1 3/4 cups milk (I used almond milk to make a dairy-free version)
1/2 cup vegetable oil
1 tablespoon white sugar
4 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla extract
  1.  Preheat waffle iron. Beat eggs in large bowl with hand beater until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, just until smooth.
  2. Spray preheated waffle iron with non-stick cooking spray. 
  3. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot.

Basic Pancakes

I have decided that I like homemade pancakes WAY more than the box mix or using Bisquick.  They are just like what you get at a restaurant and super easy!

2 large eggs
1 cup milk
2 tbsp vegetable oil
1 1/4 cup flour
1 tbsp sugar
1 tbsp baking powder
1/4 tsp salt

Stir eggs in medium size boil until smooth.
Add milk and cooking oil and mix.
Add remaining ingredients and stir until moistened.
Set electric frying pan to 380 degrees and spray with non stick cooking spray.
Once heated, scoop 1/4 of batter onto the frying pan, about 4 at a time (one in each corner).
When tops are bubbly and edges ate dry looking, turn them with a spatula to brown other sides.
Remove with lifter and serve with butter and maple syrup.
Spray should not be needs for the rest of the cooking.

For chocolate chip or blueberry, add 3/4 to 1 cup into the pancake batter before placing on frying pan.

Chocolate Chip Cookies

Best recipe for soft chocolate chip cookies. I do not like when they are hard. These are my go to recipe and you should definitely try them!


2/3 cup butter
2/3 cup shortening
1 cup brown sugar
1 cup granulated sugar
2 eggs
2 tsp vanilla
3 cups flour
1 tsp baking soda
1 tsp salt
2 6 ounce packages semisweet chocolate chips


Preheat over to 375 degrees.
Mix butter, sugar, eggs, and vanilla thoroughly.
Blend in remaining ingredients.
Drop dough by desired size on ungreased cookie sheets
Bake for 8 to 10 minutes or until light golden brown.
Cool slightly before removing from baking sheet.





Chocolate Chip Cupcakes

I made 5 different types of cupcakes tonight with one recipe of my favorite White Cake.

Mix 1 cup of semi-sweet chocolate chips into cake batter.

Frost with Butter Cream Frosting.


Double Chocolate Muffins

2 cups flour
½ cup unsweetened cocoa powder
1 ½ cups sugar
½ tsp baking soda
2 tsp baking powder
¼ tsp salt
1 ¼ cups milk
1 egg
2 tsp vegetable oil
1 tsp vanilla extract
1 cup semisweet chocolate chips
4 tablespoons white sugar

Preheat oven to 350 degrees and grease muffin cups or line with paper muffin liners.
In medium bowl, Sift together flour, cocoa, sugar, baking powder, baking soda and salt. In large bowl stir in milk, egg, oil and vanilla. Mix dry ingredients to large bowl; beat well. Add chocolate chips and stir well.

Fill muffin cups 3/4 full and sprinkle muffins with sugar.

Bake for 20 to 25 minutes, or until toothpick inserted in center comes out clean.




Chocolate Chip Cookie Dough Cupcakes

These cupcakes are great for any cookie dough lover.  I made my ususal butter cream frosting and shaved chocolate into it, to make a chocolate chip icing on top to finish it off.

I baked these cupcakes in silicone cupcake liners.  They work really well and look great too!

Cookie Dough
1 ½ cups flour
¼ tsp baking soda
¼ tsp sea salt
½ cup butter, softened
¼ cup sugar
½ cup brown sugar
1 egg
2 tsp vanilla extract
1 cup miniature semisweet chocolate chips  

White Cake
2 cups sugar
1 cup butter
4 eggs
4 tsp vanilla extract
3 cups flour
3 ½ tsp baking powder
1 cup milk

For cookie dough:
Mix the flour, baking soda, and sea salt and set aside. In a large bowl, beat the butter, white sugar, and brown sugar with an electric mixer in a large bowl until smooth.
Add the egg and the vanilla extract and beat until smooth.
Mix the flour mixture into the sugar mixture until it is all incorporated.
Fold in the chocolate chips just enough to evenly combine.
Form the dough into tablespoon-sized balls and place onto a baking sheet or plate and freeze until solid (about 2 hours).

For cake & adding cookie dough:
Preheat an oven to 350 degrees. Line 24 muffin cups with paper liners.
In a medium bowl, cream together the sugar and butter.
Beat in the eggs, one at a time, then stir in the vanilla.
Combine flour and baking powder, add to the creamed mixture and mix well.
Stir in the milk until batter is smooth.
Pour or spoon batter into the prepared cupcakes liners, filling each 2/3 full.
Place a frozen cookie dough ball on the top center of each cupcake.
Bake in the preheated oven until a toothpick inserted into the cake portion of the cupcake (not the cookie dough ball) comes clean, about 20 minutes.
Cool in the pans for 10 minutes before removing to cool completely on a wire rack.
Once wool, mix chocolate shavings into butter cream frosting and spread on to cupcakes.  Top with chocolate shavings and enjoy!
