Chicken Chipotle Panini

I made the focaccia and chipotle mayo and here are the recipes. 

If you want to buy all the ingredients pre-made, you will need:
Focaccia Bread
Sliced Chicken
Chipotle Mayonnaise
Havarti Cheese
Tomato
Basil Leaves, fresh
Onions (optional)


Chipotle Mayo
1/2 tsp chipotle pepper powder
1/4 tsp garlic powder
3 tbsp Hellman's light mayonnaise
3 tbsp light Miracle Whip
1 tbsp Mississippi Honey Mustard Mayonnaise


Mix it all together.  As easy as that!


Focaccia Bread
2 3/4 cups all-purpose flour
1 teaspoon salt
1 teaspoon white sugar
1 tablespoon active dry yeast
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon dried basil
1 pinch ground black pepper
1 tablespoon vegetable oil
1 cup water
2 tablespoons olive oil
1 tablespoon grated Parmesan cheese

In a large bowl, stir together the flour, salt, sugar, yeast, garlic powder, oregano, thyme, basil and black pepper. Mix in the vegetable oil and water.
When the dough has pulled together, turn it out onto a lightly floured surface, and knead until smooth and elastic. Lightly oil a large bowl, place the dough in the bowl, and turn to coat with oil. Cover with a damp cloth, and let rise in a warm place for 20 minutes.
Preheat oven to 450 degrees F (230 degrees C). Punch dough down; place on greased baking sheet. Pat into a 1/2 inch thick rectangle. Brush top with olive oil. Sprinkle with Parmesan cheese and mozzarella cheese.
Bake in preheated oven for 15 minutes, or until golden brown.

BBQ Chicken Pizza

I made this for someone special, as it is their favorite pizza.  My parents ended up eating it as well and have asked me to make it again since then.  My mom usually hates pizza, but she loves this one!

This recipe makes 2 pizzas

2 Pizza Shells
3 chicken breasts
1/2 red pepper, thinly sliced
1/2 green pepper, thinly sliced
1/2 red onion, thinly sliced
2 bunches of cilantro, finely chopped by knife or in a food processor
2 cups BBQ sauce
3 cups Monterrey jack cheese
1 cup sharp cheddar cheese

Preheat oven to 400 degrees.
Line a baking pan with tin foil, spray with cooking oil, and put the 3 chicken breasts in it.  Spread BBQ sauce on both sides of the breasts and cook for 15 to 20 minutes, or until cooked.
While waiting for chicken to cook, start cutting the vegetables into THIN slices, and set aside.
Grate cheese onto a plate for later.  Grate more than recipe calls for, if desired.
Spread 3/4 of a cup of BBQ sauce on each pizza shell (or more if desired).
Remove cilantro leaves off of stem and finely chop by hand or in a food processor.
Spread chopped cilantro evenly over BBQ sauce on each pizza shell.
Place onion and peppers evenly over pizza shells.
Thinly slice cooked chicken and place evenly over pizza shells.
Evenly cover vegetables and chicken with both cheeses.
Place pizza crust on cookie sheet. Bake in preheated oven for 10 to 15 minutes, or until cheese is melted.
